Cherry-Almond Clafouti



  • 1/2 cup whole almonds (about 2 ounces)
  • 1 1/4 cups whole milk
  • 1 tablespoon plus 1/2 cup sugar
  • 8 ounces dark sweet cherries, pitted, halved (about 2 cups)
  • 3 large eggs, room temperature
  • 1/2 teaspoon almond extract
  • Pinch of salt
  • 1/4 cup all purpose flour
  • Powdered sugar


  • Blend almonds in processor until ground but not pasty. Transfer to small saucepan; add milk and bring to simmer. Remove from heat; let steep 30 minutes. Pour through fine strainer, pressing on solids to extract as much liquid as possible. Discard solids in strainer.

  • Preheat oven to 375°F. Butter 10-inch-diameter glass pie dish; sprinkle with 1 tablespoon sugar. Scatter cherries evenly over bottom of dish.

  • Using electric mixer, beat eggs, almond extract, salt, and remaining 1/2 cup sugar in medium bowl until well blended. Add strained almond milk and beat to blend. Sift flour into egg mixture and beat until smooth. Pour mixture over cherries. Bake until set and knife inserted into center comes out clean, about 30 minutes. Cool completely.

  • DO AHEAD Can be made 6 hours ahead. Let stand at room temperature.

  • Lightly dust clafouti with powdered sugar and serve.

Spiced Palmiers

These buttery, heart-shaped French cookies are great for dunking into hot cocoa—or serving with coffee.

Spiced Palmiers


  • 1/2 cup sugar
  • 4 teaspoons ground cinnamon
  • 1 tablespoon ground cardamom
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cloves
  • 1 14-ounce package frozen puff pastry (such as Dufour), thawed
  • All-purpose flour (for dusting)
  • 3 tablespoons unsalted butter, melted, divided


  • Line a baking sheet with parchment paper. Mix sugar and spices in a small bowl. Unfold pastry on a lightly floured work surface into a 14×10-inch rectangle, rolling out if needed. Brush lightly with butter. Sprinkle 1/4 cup spiced sugar over. Cut in half lengthwise.
  • Fold both long sides of 1 pastry strip so that outer edges meet in the center of strip. Brush with more butter; sprinkle with 2 tablespoons spiced sugar. Fold in half lengthwise, forming a 14 inch-long log about 1 inch wide. Repeat with remaining pastry strip.
  • Place logs on prepared baking sheet, cover with plastic wrap, and chill until firm, about 30 minutes. DO AHEAD Palmier dough can be prepared 2 weeks ahead. Store airtight in freezer. Thaw overnight in refrigerator before continuing.
  • Preheat oven to 425°. Line 2 baking sheets with parchment paper. Cut each log crosswise into 1/4-inch slices. Lay slices flat on prepared baking sheets, spacing 1 inch apart.
  • Bake palmiers until golden on bottom, about 8 minutes. Using a thin metal spatula, turn palmiers over. Brush lightly with butter; sprinkle with more spiced sugar. Bake until sugar is bubbly and pastry is golden brown, about 15 minutes longer. Transfer palmiers to a wire rack; let cool. DO AHEAD Palmiers can be made 2 days ahead. Store airtight at room temperature.

Pan-Roasted Chicken Paillard

At the Lambs Club in New York, chef Geoffrey Zakarian dusts the chicken with flour and lets it cook skin side down—keys to a juicy cutlet under a superthin, crackly layer of skin. If you can find boneless, skin-on chicken breasts, they’ll save you a step.

Pan-Roasted Chicken Paillard


  • 2 8-ounce skin-on bone-in chicken breasts
  • Kosher salt and freshly ground black pepper
  • Wondra flour or all-purpose flour (for dusting)
  • 3 tablespoons unsalted butter
  • 1 lemon, halved


  • Preheat oven to 400°. Using a thin, flexible knife, cut chicken breasts away from bones, leaving skin intact. Place chicken between 2 sheets of plastic wrap; using a mallet or heavy skillet, pound chicken until 1/2-inch thick (which will help it cook evenly and stay juicy). Season chicken with salt and pepper. Dust with flour; shake off excess.
  • Melt butter in a small saucepan. Spoon off milk solids (the white foam that separates from the butter) to make clarified butter. (It has a high smoke point and won’t burn over high heat.)
  • Pour clarified butter into a large ovenproof skillet set over medium-high heat. When butter begins to shimmer, place chicken in skillet skin side down. Cook, occasionally pressing on chicken with a spatula so skin maintains even contact with skillet, until skin is brown, 5-6 minutes.
  • Transfer skillet to oven; roast until chicken is just cooked through, 3-4 minutes. Remove skillet from oven; turn chicken breast over. Let stand in skillet for 1 minute. Transfer chicken to a plate and let rest for 5 minutes.
  • Serve with lemon halves alongside.

Post Workout Protein Smoothie- Strawberry Peanut Butter Banana Smoothie

This Strawberry & PB Banana Smoothie is high in protein, heart healthy fats, antioxidants, and other cancer fighting vitamins.

This recipe is especially delicious, thanks to a handful of frozen strawberries. It makes for great source of post workout protein and offers far more nutrients than most post workout recovery supplements.

The yogurt base offers bacteria that support a healthy digestive system and between the fruit and the peanut butter, this blend offers over 25% of your daily fiber.

3/4 Cup vanilla yogurt
5 large frozen Strawberries
1 Banana
